Turkey stuffed acorn squash
Acorn squash can actually be made in the microwave in a matter of minutes. Simply cut it in half, put one half in a microwave-safe bowl, and microwave for three to four minutes or until you can push a fork through it easily. Before putting the squash in the microwave, sauté ground turkey with onions, garlic, dried oregano, basil, and a tablespoon of tomato paste. Put this mixture inside of your cooked squash.
